We start off by making salted caramel from scratch, involving temperatures of more than 175 degrees Celsius. It is indeed a dangerous affair. The liquid caramel gold is then transformed into a gorgeous ice cream base. What is Speculoos? It's a type of spiced short crust biscuit that is traditionally baked for Christmas in many parts of Europe. In Singapore it is typically known as the Lotus Biscuit. The spiced biscuits are crushed into crumbs and folded into the velvety caramel ice cream base. The end product is truly Christmas in a heavenly pint!
